SWEETPOTATOES IN ORANGE SHELLS BY EDDIE image

Mom made this for Christmas and was a treat. I like to make it just because. This recipe can be doubled very easy and frozen.

Number Of Ingredients 7

3 oranges
1- 16 oz can sweet potatoes undrained
2 Tbsp bitter melted
3 Tbsp brown sugar packed
1/2 tsp salt
1/4 c flaked coconut
12 mini marshmallows

Steps:

  • 1. Squeeze oranges, save juice. Remove membranes from orange shells.
  • 2. Mash sweet potatoes, Blend in 3 tablespoons orange juice, brown sugar, and salt. Stir in coconut
  • 3. Spoon sweet potato mixture into the orange shells. Place in a shallow baking pan.
  • 4. Preheat oven to 350 degrees, bake for 20 to 30 minutes or until lightly browned on top.
  • 5. Top with marshmallows and bake 5 minutes longer to melt and brown the marshmallows.
  • 6. NOTE: If you freeze this recipe, let it come to room tempature before cooking
