Provided by Susan Cutler

Categories     Tacos & Burritos

Number Of Ingredients 8

vegetable oil for frying
3 c mexican meat mix, thawed
12 - 15 corn tortillas
2 c grated cheddar cheese
shredded lettuce
2 tomatoes, fresh and chopped
1/4 c chopped green onion
1 can(s) (7 oz) green chili salsa

Steps:

  • 1. Heat 2 inches of oil to 375F degrees in a large skillet. Heat 'Mexican Meat Mix' in a medium saucepan. Fry tortillas in hot oil. Using tongs, fold tortillas in half, then immediately open to 45-degree angle. Fry about 1 minute, until crisp. Drain on paper towels. Place 2 Tablespoons 'Mexican Meat Mix' in each cooked tortilla. Top with grated cheese, lettuce, tomatoes, green onion and green chili salsa.
  • 2. Variation: For convenience, us prefried, formed corn tortillas instead of forming your own.

These tacos are a great way to use up leftover beef. They're also really easy to make, which is a bonus.

The tacos were good, but I thought the beef was a little dry. I'll try adding some more moisture next time.

The tacos were a bit too spicy for my taste, but my husband loved them. I'll definitely make them again, but I'll use less chili powder next time.
