Tex-Mex Chicken Soup image

We keep busy here on our ranch. So I'm always looking for dishes that can be prepared in a hurry but are still filling an tasty. This quick and easy soup is a real winner!

Yield 12 servings (3 quarts).

Number Of Ingredients 16

1/2 cup chopped onion
1 tablespoon canola oil
2 garlic cloves, minced
4 cups chicken broth
3 cups cubed cooked chicken
3 medium zucchini, sliced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
1 can (8 ounces) tomato sauce
1/2 cup salsa
2 teaspoons ground cumin
1 teaspoon salt, optional
3/4 teaspoon pepper
1/2 teaspoon dried oregano
Shredded cheddar cheese, optional
Tortilla chips, optional

Steps:

  • In a large stockpot, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the next 11 ingredients; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Serve with cheese and tortilla chips.

This soup was delicious! I loved the combination of flavors. I used rotisserie chicken and it was so easy to make. I will definitely be making this soup again.

I've made this soup several times and it's always a hit! It's so easy to make and it's always flavorful. I usually add a can of black beans and a can of corn, and sometimes I'll add some shredded cheese on top. It's a great soup for a cold winter day

This soup was just okay. I found it to be a bit bland and the chicken was dry. I also didn't like the texture of the soup. It was too thick and gloopy. I wouldn't make this soup again.

I made this soup last night and it was delicious! I used leftover rotisserie chicken and it was still very flavorful. I also added a can of black beans and a can of corn. It was a great way to use up leftovers and it was a healthy and filling meal.
