Categories     Bean     Dessert     Bake     Cupcake

Yield 11 jumbo

Number Of Ingredients 11

1 ½ cup white flour
1 teaspoon baking soda
1 cup sugar
½ cup dutch processed cocoa powder
2/3 cup applesauce (or two large apples peeled, cored, and pureed in a blender with a dash of sugar)
(1) 14 ½ oz silken tofu, drained on paper towel
½ teaspoon cinnamon
¼ teaspoon cayenne
1 teaspoon vanilla
1 teaspoon almond extract
1 teaspoon canola oil

Steps:

  • Preheat oven to 350°F. Mix all ingredients Spray cups of extra large muffin pan with oil. Recipe should make 11 jumbo muffin sized brownies. Bake for 22 minutes or until brownies pull away from the sides of the pan. Let cool for 10 minutes before turning out of the pan. Drizzle with Chocolate topping used to plate desserts(the kind that comes in a squeeze bottle) before you serve them. Garnish with a slice of strawberry or a couple of raspberries. You can freeze when cooled to keep fresh until ready to serve if making ahead of time. Muffin top pans are also really nice. They make lovely hockey puck sized cakes. Spray the pan with oil spray to prepare. You can remove the baked muffin tops almost immediately after baking with a spatula. Move to a rack to finish cooling.

These brownies were a complete disaster. They were dry, crumbly, and flavorless. I would not recommend this recipe to anyone.

I followed the recipe exactly, but my brownies turned out really flat. I'm not sure what went wrong.

These brownies are a great way to use up leftover tofu. They're also a great option for people who are looking for a vegan or gluten-free dessert.
