From Rick Bayless, 'Authentic Mexican.' There's nothing like a good, fresh tomatillo sauce! Great on grilled chicken! If you want a really hot salsa, don't seed the jalapenos!

Time 20m

Yield 1 1/2 cups, 3 serving(s)

Number Of Ingredients 6

6 tomatillos, husked and rinsed or 1 (13 ounce) can tomatillos
1 jalapeno, seeded and chopped
6 sprigs cilantro, chopped
1/2 small white onion, chopped
1/2 teaspoon salt
1/4 cup water

Steps:

  • If using fresh tomatillos, boil in salted water to cover until JUST tender, about 8-10 minutes. Drain. For canned ones, just drain them.
  • Place the tomatillos, cilantro, and onion in a blender or processor. Blend until coarsely pureed.
  • Put in a bowl, and add 1/4 cup water or until it has reached a sauce-like consistency. Add salt, and let stand 30 minutes before using.

I thought this recipe was way too complicated. There are much easier ways to make tomatillo sauce.

The sauce was a bit too runny for my taste, but the flavor was spot on. Next time I'll try cooking it down for a bit longer.

This tomatillo sauce was good, but not great. I found it to be a bit bland and lacking in flavor. I think it could have used more spices or herbs.

I'm not a huge fan of tomatillos, but I thought I'd give this recipe a try. I'm glad I did! The sauce was surprisingly delicious and I loved the smoky flavor from the roasted poblanos.

This sauce was a bit too spicy for me, but that's just my personal preference. I still thought it was a great recipe and I'll definitely make it again, but with less chili peppers.

This is my new go-to tomatillo sauce recipe. It's so easy to make and the results are always delicious. I love the fresh, tangy flavor of the tomatillos and the roasted poblanos add a wonderful depth of flavor.

This tomatillo sauce was an absolute delight! The flavors were perfectly balanced, with a nice tang from the tomatillos and a subtle smokiness from the roasted poblanos. I served it over grilled chicken and rice, and it was a hit with my family.
