Tomato, Spelt and Herb Salad image

Tomatoes are very rich source of vitamin A and vitamin C, not to mention lycopenes, phytonutrients that some scientists believe may have antioxidant properties. I am heading out to my garden to reap this summer's bounty. This is a light summer chopped salad with chewy and crunchy textures. Give it time to marinate for the best flavor.

I found the spelt to be a bit too chewy. I would cook it for a shorter amount of time next time.

The salad was a bit too oily for me. I would use less olive oil next time.

This salad is a bit bland for my taste. I would add some more seasoning or a dressing to give it more flavor.

I'm not a huge fan of spelt, but I really enjoyed this salad. The spelt was cooked perfectly and had a nice chewy texture.
