TORTELLINI SALAD image

Number Of Ingredients 13

2 lbs. fresh tortellini from
deli section
1 envelope Knorr vegetable dry soup mix
3/4 cup Best Foods Mayonnaise
2 T fresh lemon juice
1 T dried basil
1 T thyme
3 T chopped fresh parsley
1/2 cup sliced green onions (white & green parts)
1/2 cup diced red onion
1 can artichoke hearts, leafy ends cut off
3 chopped roma tomatoes
1 can drained large black olives, cut in half

Steps:

  • Boil tortellini 6 minutes. Drain & rinse with cold wter until cool. In large bowl, blend mayo, lemon juice, vege soup mix, & herbs. Toss gently with tortellini. Add remaining ingredients. Chill overnight.
