TRIPLE-BEAN CASSEROLE image

4 slices bacon
1 tsp. canola oil
1 small yellow onion chopped
2/3 c. ketchup
3 tbsp cider vinegar
2 tbsp molasses
1.5 tsp dry mustard
1 c water
15.5 oz can great northern beans rinsed and drained
15.5 oz. can black beans rinsed and drained
15.5 oz. can red kidney beans rinsed and drained

Steps:

  • Cook bacon until crisp, then crumble; set aside. Heat oil over low heat; add onions and cook until softened, about 5 minutes. Add ketchup, vinegar, molasses and mustard and stir together thoroughly. Add water, beans and bacon. Bring to simmer, cover and cook over low heat for 30 minutes. Serve hot or cold.
