Tropical-Inspired BBQ Meatloaf image

A nice tropical change to traditional meat loaf .

2 lb ground beef, lean
1 c panko breadcrumbs
1/2 c plus 3 tbsp. barbecue sauce, divided
3 Tbsp fresh parsley
1 tsp ground ginger
1 egg, lightly beaten
3-4 pineapple rings packed in fruit juice

Steps:

  • 1. Preheat oven to 350 degrees. Combine ground beef, panko, 3 tbsp. bbq sauce, parsley, egg, ginger along with salt and pepper. Mix thoroughly.
  • 2. Press mixture into a 10-in. loaf pan on a rimmed baking sheet. Brush top of meatloaf with 1/4 cup bbq sauce and press pineapple rings onto top of loaf.
  • 3. Bake for 1 hour. Then brush remaining 1/4 cup bbq sauce and bake an additional 15 minutes. Sprinkle with parsley, if desired.
