TUNA, GREEN OLIVE, AND EGG SALAD SANDWICHES image

Yield 4 sandwiches

Number Of Ingredients 12

4 large eggs, hard-cooked, peeled, quartered
1/4 cup extra-virgin olive oil
1 tsp. fresh lemon juice
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/2 tsp. smoked paprika
1/2 cup green olives, sliced
1 can (5 oz.) oil-packed pole- or troll-caught tuna, drained
1/4 cup onion, slivered
1/2 cup flat-leaf parsley leaves
8 tomato slices
8 slices ciabatta, toasted

Steps:

  • Whisk olive oil, lemon juice, salt, black pepper, and paprika. Add green olives, tuna, onion, parsley. Stir to combine, leaving tuna in chunks. Arrange tomato on 4 slices on ciabatta
