Turkey Caprese Sandwiches image

I went to a friend's party and had a bruschetta with Caprese salad on top. I loved the taste and started serving it at my parties. One day I had no bread, only bagels, and added turkey and a few other items. My young daughter thought it was great. I started making the sandwiches for parties and everyone loved them! -Maria Higginson, Bountiful, Utah

I used sun-dried tomatoes instead of fresh tomatoes and they added a nice tangy flavor to the sandwiches.

I'm allergic to basil, so I used spinach instead. The sandwiches were still delicious, but I missed the flavor of the basil.

I had a hard time finding fresh mozzarella, so I used provolone instead. The sandwiches were still good, but I think they would have been better with fresh mozzarella.

These sandwiches were a bit bland for my taste. I think next time I'll add some roasted red peppers or sun-dried tomatoes.
