VANILLA SWEET POTATO MASHED image

Number Of Ingredients 6

4 medium sweet potatoes
2 tablespoons of skim milk
1 tablespoon of salted butter
2 stalks fresh vanilla beans - scraped
2 tablespoons of boiling liquid reserved
Salt and pepper, to taste

Steps:

  • Wash, peel and dice sweet potatoes. Put diced sweet potatoes in medium saucepan in enough water to cover. Bring to a boil over high heat, reduce heat to simmer, stir occasionally & simmer until tender. Combine skim milk, salted butter and scraped vanilla bean in small saucepan and heat. Drain potatoes (reserving 2 tablespoons boiling liquid) in colander. Run potatoes through a food mill and put into large bowl. Add heated milk, butter and vanilla mixture, reserved boiling liquid, salt and pepper to taste. Use a 4-ounce ice cream scoop to neatly plate Vanilla Sweet Potato Mashed.
