Kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup heavy cream, at room temperature
1 vanilla bean, split and seeds scraped out
1/2 teaspoon lemon zest (from about 1 lemon)

  • Transfer the potatoes to a ricer in batches and rice into a medium bowl. Add the butter, cream, vanilla seeds, lemon zest and 3/4 teaspoon salt and mix well with a rubber spatula to combine.
  • Heat the oil in a small pan over medium heat until hot. Add the prosciutto and cook, stirring often with a slotted spoon, until crispy and golden brown, about 3 minutes. Remove to a paper towel-lined plate to drain.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with smooth skin. Avoid any that are soft or have bruises or cuts.
  • Roast the sweet potatoes before mashing: Roasting the sweet potatoes brings out their natural sweetness and gives them a slightly caramelized flavor. You can roast them in the oven or on a grill.
  • Use a potato ricer to get smooth mashed sweet potatoes: A potato ricer is the best tool for getting smooth, lump-free mashed sweet potatoes. If you don't have a potato ricer, you can use a food processor or blender, but be careful not to over-process the potatoes, or they will become gluey.
  • Add flavorings to taste: You can add a variety of flavorings to your mashed sweet potatoes, such as butter, brown sugar, maple syrup, cinnamon, nutmeg, or ginger. Start with a small amount and add more to taste.
  • Serve immediately: Mashed sweet potatoes are best served immediately after they are made. If you need to make them ahead of time, you can store them in the refrigerator for up to 3 days or in the freezer for up to 2 months.

Conclusion:

Vanilla sweet potato mash is a delicious and versatile side dish that can be enjoyed with a variety of meals. It is easy to make and can be tailored to your own taste preferences.
