Vegetable Medley image

This light stir fry garden vegetable salad medley, is one that will be enjoyed many a time, because of it's flavors, with broiled Fish or Keilbasa sausage or another main too ~ a winning combination!

Number Of Ingredients 9

1 Tbsp butter
1 Tbsp olive oil
1 small chopped onion
1.5 lb yellow squash, thinly sliced
10 oz frozen peas, thawed
1 c shredded carrots
3/4 c chicken broth
1/4 tsp salt
tsp pepper

Steps:

  • 1. In large skillet, heat butter and oil over medium-high heat; add onion, and cook until soft, about 5 minutes.
  • 2. Stir in squash, and cook 10 minutes, stirring frequently.
  • 3. Add peas, carrots, broth, salt and pepper; cook, stirring frequently, until squash is cooked.

This recipe is a great way to use up leftover vegetables. I had some leftover carrots, celery, and broccoli and I threw them all in this medley. It was a delicious and easy way to get my veggies in.
