Steps:
- Preheat oven to 450 Saute onions, garlic, peppers and tomato, season to liking. Add black beans Scramble eggs and add to onion, pepper mixture. spray baking dish with cooking spray spread tomatillo sauce on bottom of pan. Place 2 tortillas on bottom, spread egg, beans, pepper mixture over tortillas. Cover with cheese (to your liking) and spread with more tomatillo sauce, cover with 2 tortillas, enchilada sauce and sprinkle with cheese. Bake for 20 minutes or until bubbly.
