I've made this recipe with both mild and medium salsa. I prefer the medium salsa because it gives the mac and cheese a bit more flavor. I also like to add a little bit of chopped jalapeño pepper for an extra kick.

I'm not a fan of spicy food, so I used a mild salsa in this recipe. It was still very flavorful and cheesy. I served it with a side of apple sauce for the kids.

This is a great recipe for a potluck or party. It's easy to make ahead of time and it always disappears quickly. I usually double the recipe so I have plenty of leftovers.

I love that this recipe uses salsa instead of tomato soup. It gives the mac and cheese a nice Mexican flair. I also added some shredded chicken for extra protein.

I'm not a huge fan of Velveeta, but this recipe changed my mind. The salsa and macaroni mellowed out the Velveeta flavor perfectly. I'll definitely be making this again.
