Waldorf Salad image

this is a nice fruity crunchy side for the holidays and it's not too hard on the waist either.

Number Of Ingredients 9

5 c unpeeled, cored diced apples, use 2 diferent colors
1 c celery, diced
1/2 c walnuts, coarse chop
1/2 c raisins
1/2 tsp lemon juice
dressing:
1 1/2 c pineapple juice
2 Tbsp cornstarch
1 Tbsp sugar

Steps:

  • 1. Boil dressing ingredients until thickened, cover and chill 2 hours.
  • 2. Combine all salad ingredients together, then toss with dressing. Let stand a few minutes before serving
