Time 40m

Yield 4 servings

Number Of Ingredients 9

2 3/4 cups salted water
1 cup uncooked long grain brown rice
3 tablespoons each vegetable and olive oil
3 to 4 tablespoons rice or Champagne vinegar
Touch of Dijon mustard
Salt and freshly ground pepper
2 cups thawed frozen "petite" peas
1/4 cup torn basil leaves
1/4 cup chopped flat leaf parsley leaves

  • Bring water to a boil, add brown rice, cover and cook over very low heat for 30 minutes. Check the brown rice; if not tender, cook for 5 minutes longer. Drain and spread the rice out in a shallow bowl to cool somewhat.
  • While rice is cooking in the bottom of a mixing bowl combine the oils, vinegar, mustard and season to taste with salt and pepper.
  • When chicken is done, combine the rice, peas, basil and parsley and adjust the seasoning.

This recipe was easy to follow and the salad turned out great! I especially liked the roasted Brussels sprouts - they were crispy and flavorful. I will definitely be making this salad again.

This salad was a bit too bland for my taste. I think it needed more seasoning or a more flavorful dressing.

I'm not a big fan of warm rice salads, but this one was actually pretty good. The roasted vegetables were flavorful and the dressing was light and tangy. I would definitely make this again.

This salad is amazing! I love the combination of roasted vegetables and warm brown rice. The dressing is also perfect - not too heavy or too light.

Not bad, but not great either. I thought the rice was a bit dry and the vegetables were overcooked. I also found the dressing to be a bit too sweet for my taste.

Yum! This salad is so good! The roasted vegetables add a nice smoky flavor and the dressing is light and flavorful. I'll definitely be making this again.

This rice salad was just okay. I found the flavors to be a bit bland and the vegetables were undercooked. I think I would have enjoyed it more if I had roasted the vegetables for a longer period of time.

This warm brown rice salad was an absolute delight! The flavors were perfectly balanced, with the sweetness of the roasted vegetables complementing the nutty flavor of the rice. I followed the recipe exactly and it turned out wonderfully.
