- 1. Rub Creole seasoning evenly over chicken.. 2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 2 minutes. Turn chicken over: Stir in okra, thyme, and tomatoes. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Uncover and cook 2 minutes or until liquid is reduced by half. Serving size: about 2 chicken thighs and 1/2 cup tomato mixture.
