Welsh Rarebit II image

My version of the old classic, using American cheese, mustard and soy sauce. Takes a bit of time, but worth the effort! Serve it on toast. Garnish with crumbled bacon and chopped tomato.

I've tried many Welsh rarebit recipes over the years, but this one is by far the best. The addition of stout gives it a rich, malty flavor that really takes it to the next level.
