Wenatchee Salad (Like a Waldorf) image

The Wenatchee Valley is in the central part of Washington state and is the apple and pear capital of the Northwest. Cook time is chilling time. You could leave the chicken out and add more apple for a vegetarian version. THE COOK TIME IS REFRIGERATION TIME.

1 qt cold water
1 tsp fresh lemon juice
2 medium red apples, unpeeled (cored and diced)
2 medium granny smith apples, unpeeled (cored and diced)
1 medium pear, unpeeled (firm green or red, cored and diced)
3 c cooked chicken, diced
1 c celery, thinly sliced
3/4 c walnuts, coarsely chopped (or pecans)
1/2 c dried cranberries (craisins)
1 c mayonnaise
1/2 c sour cream
2 Tbsp fresh lemon juice
2 Tbsp fresh parsley, finely chopped
lettuce, for serving

Steps:

  • 1. Pour the cold water into a medium bowl, and mix in the 1 teaspoon of lemon juice. Add the diced fruit and allow to stand briefly. This keeps the fruit from browning.
  • 2. In a large bowl, mix the chicken, celery, walnuts and dried cranberries.
  • 3. Drain and add the diced apples, mixing well.
  • 4. In a small bowl, whisk together mayonnaise, sour cream, 2 tablespoons lemon juice and parsley.
  • 5. Add to the chicken mixture and gently toss to coat.
  • 6. Cover bowl with plastic wrap and chill thoroughly before serving.
  • 7. To serve place some lettuce leaves on each plate on top with salad.
