Whole Wheat Scones image

These delicious & healthy scones have buttermilk in them to make them soft.

Number Of Ingredients 9

1/4 c cold butter
2 c whole wheat flour
1 c all purpose flour
2 Tbsp sugar
pinch of salt
2 1/2 tsp baking soda
2 eggs
3/4 c buttermilk
1/4 c raisins

Steps:

  • 1. Preheat the oven to 400F. Grease and flour a large baking sheet. Cut the butter into small pieces. Combine the dry ingredients in a bowl. Add butter and rub in until the mixture resembles coarse crumbs. Set aside.
  • 2. In another bowl, beat together the eggs and buttermilk. Set aside 2 tbsp.for glazing. Stir the remaining egg mixture into dry ingredients until it just holds together. Stir in the raisins.
  • 3. Roll out the dough about 3/4 inch thick. Stamp out circles with floured biscuit cutter. Place on prepared baking sheet and brush with the glaze.
  • 4. Bake for 12-15 minutes, until golden Allow to cool slightly before serving. Split in half with a fork while still warm and spread with butter and jam, if desired.
