WHOLE WHEAT WAFFLES WITH FLAX image

Yield 8-10 waffle

Number Of Ingredients 9

3 cups stone-ground whole wheat flour
1 cup unbleached white flour
1 tbsp flax seed meal
1 tsp salt
1 tbsp sugar
2 tsp baking powder
2 large eggs
1/3 cup vegetable oil
3 cups whole milk at room temperature

Steps:

  • Mix dry ingredients in a bowl. Separate the egg yolks from the egg whites. Add oil and egg yolks to the dry mixture, mix slightly to incorporate yolk and oil, then slowly mix in the milk. Warm milk generally gives better results than cold milk. Beat the egg whites until stiff, then fold into the batter. Cook until golden brown in a waffle iron.
