Wilted Spinach with Apples & Feta Cheese image

This is another item on my 9th Anniversary Dinner Menu, & is from the cookbook A1 STEAK HOUSE FAVORITES. I HAVE USED THIS OR A VERSION OF THIS RECIPE, BEFORE DAN & I WERE MARRIED. Number Of Ingredients 7

1 lb pre washed baby leaf spinach
1 bunch green onions chopped
6 slice bacon cooked on the stove top to reserve the drippings
5 Tbsp apple cider or white distilled vinegar
2 tsp sugar
1 large apple, i used pink cripp plus extra for garnish
1/2 c or more crumbled feta cheese

Steps:

  • 1. I am giving you the ingredients and amounts that I used. This is the book where the original recipe came from.
  • 2. Chop the green onions and mix with the baby spinach and set aside till needed.
  • 3. Cook the bacon over medium high heat in a large skillet until crisp, I used a 16 inch size. Remove bacon to paper towel and set aside till needed crumble when cool enough to handle. Save about 4 tablespoons of the bacon fat in skillet.
  • 4. Add the sugar and vinegar to a measuring cup or small bowl, and stir until the sugar dissolves. With heat still on medium high add the vinegar sugar mixture to the skillet, and heat until it boils. Then add the spinach and onions and toss until spinach begins to wilt, about 1 minute. Then remove from heat.
  • 5. Add the bacon and toss gently to mix. Serve immediately. I made each serving from the skillet.
  • 6. Then add the apples & feta and stir to mix. Serve immediately while still warm. I added the feta after I place it on the serving dish. Garnish with additional Apple slices if desired. Add a SPRINKLING OF CHOPPED CHIVE OVER EACH PLATE IF DESIRED.
  • 7. Had one left over for the next days dinner. You can nuke it in the microwave if you want it to be warm.
