Working Woman's

Simple but really good, quick supper or an easy weekend breakfast. Try it with some cooked ham or crumbled cooked bacon or sausage!

6 eggs
1/2 cup flour
1 teaspoon baking powder
1 cup milk
8 ounces cottage cheese
3 ounces cream cheese, cubed
1 lb monterey jack cheese, cubed
6 tablespoons butter, cubed

Steps:

  • Beat eggs.
  • Add flour, milk and baking powder.
  • Fold in butter and cheeses.
  • Pour into greased 13x9 pan.
  • Bake at 450 for 30 minutes.
