This is a family favorite side dish, especially with Mexican menues. It is off the Rice-a-Roni site and is very easy to prepare. You can make it a main course, if you'd like, by adding browned ground beef or turkey.

Steps:
- 1. In a large skillet, melt butter. Stir in rice/vermicelli mix and cook until vermicelli is slightly browned. Add special seasoning packet, tomatoes and water. Bring to a boil. Cover, reduce heat, and simmer 15 - 20 minutes. Top with chopped cilantro or parsley.
