Zesty Spanish Rice image

This is a family favorite side dish, especially with Mexican menues. It is off the Rice-a-Roni site and is very easy to prepare. You can make it a main course, if you'd like, by adding browned ground beef or turkey.

Number Of Ingredients 4

1 pkg spanish rice-a-roni mix with vermicelli
2 Tbsp butter
2 c warm water
1 can(s) diced tomatoes

Steps:

  • 1. In a large skillet, melt butter. Stir in rice/vermicelli mix and cook until vermicelli is slightly browned. Add special seasoning packet, tomatoes and water. Bring to a boil. Cover, reduce heat, and simmer 15 - 20 minutes. Top with chopped cilantro or parsley.
