Zucchini Bake image

Great way to use up zucchini from the garden. And it can be served at a brunch as well as lunch or dinner!

Number Of Ingredients 9

1 1/4 lb zucchini, cut into 1/2 inch cubes
16 oz monterey jack cheese, cubed
1/2 c milk
4 eggs, beaten
1/4 c green pepper, chopped
1/4 c fresh parsley, chopped
3 Tbsp all-purpose flour
2 tsp baking powder
salt and pepper to taste

Steps:

  • 1. Cook zucchini in a small amount of boiling water 5 minutes or until crisp-tender; drain.
  • 2. Combine the zucchini and the remaining ingredients; stir well.
  • 3. Pour the zucchini mixture into a greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 40 minutes or until the zucchini mixture is set and the top is lightly browned. Let stand 10 minutes before serving.

I'm not a big fan of zucchini, but I really enjoyed this dish. The cheese and bread crumbs helped to balance out the flavor of the zucchini.
