ZUCCHINI & ONION FRITTATA image

Number Of Ingredients 8

1 medium onion - sliced thin
2 medium zucchini - sliced very thin
2 tblsp olive oil
3 tblsp butter
s&p
6 extra large eggs - well beaten
2/3 cup Parmesan cheese
2 tblsp parsley - minced

Steps:

  • -Preheat oven to 350 -In large skillet cook the onion in olive oil until translucent. -Add butter and zucchini. Cook on medium heat until lightly browned. s&p to taste. -In medium bowl beat eggs, add Parmesan & parsley. Pour in pan. Cook on medium until bottom is set. Transfer pan to oven. Bake 15-20 minutes until top is golden brown. Serve hot or at room temp.
