3 GINGER GINGERBREAD image

Number Of Ingredients 14

1 ½ cups flour
1 teaspoon cinnamon
¾ teaspoon ginger
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon nutmeg
1 -2 tablespoons grated, peeled fresh ginger
½ cup (1 stick) butter, room temperature
½ cup dark brown sugar
½ cup robust (dark) molasses
1 large egg
½ cup pear nectar
¼ cup crystallized ginger

Steps:

  • Preheat oven to 350 degrees. Butter and flour 8x8x2-inch baking pan. Mix first 8 ingredients in medium bowl. Beat butter and brown sugar in large until fluffy. Add molasses and egg and beat to blend. Stir in pear nectar, then dry ingredients and chopped ginger. Transfer batter to pan. Bake cake until tester inserted into center comes out clean, about 35 minutes. Transfer pan to rack; cool cake 15 minutes. Serve warm or at room temperature with brown sugar whipped cream.
