1/3 cup pepperoni, sliced
2 shallots, diced
1 large carrot, sliced
1 stalk celery, sliced
1 large zucchini, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 tablespoon basil
1/2 tablespoon oregano
2 (8 ounce) cans tomatoes
2 chicken bouillon cubes
2 cups water
1/2 cup red wine
1 (8 ounce) can spinach (drained)
1 (8 ounce) can red beans (drained)

Steps:

  • Heat oil, Add next 7 ingredients, simmer 10 minutes over medium heat.
  • Add remaining ingredients.
  • Simmer on medium low, 1/2-1hr.
