Acorn Squash with Sausage image

I usually see sweet recipes for acorn squash. I like this one because it uses the squash as a main dish. This is warm and filling, perfect for an autumn day. This recipe came from Colorado Collage.

I'm a vegetarian, so I omitted the sausage. The dish was still very flavorful and satisfying.

This recipe was too complicated and time-consuming. I don't think it's worth the effort.

The acorn squash was undercooked and the sausage was overcooked. I think I'll try a different recipe next time.

This recipe was a bit bland for my taste. I think it could have used more seasoning.
