Almond Crusted Orange Roughy image

Almond Crusted Orange Roughy with cranberry mandarin orange relish,is a favorte for my friends and family. We've also made this with crushed pecan and walnuts.

1 lb orange roughy filets
1 egg
1/2 c almonds, slivered
1/2 can(s) bread crumbs
1/4 c flour
1/4 c milk
salt and pepper to taste
3-4 Tbsp coconut oil
CRANBERRY MANDARIN ORANGE RELISH
1 can(s) mandarin oranges
1 can(s) whole cranberry sauce

Steps:

  • 1. In Med bowl, mix whole cranberry sauce with drained can of mandarin oranges. Place in fridge to chill while prepping and cooking orange roughy.
  • 2. 1) Place flour in shallow bowl. Combine milk and egg in second bowl. Combine Almonds with bread crumbs in third bowl. 2) Preheat large saute pan on medium. Sprinkle fish with seasoned salt. Dredge in flour, dip in egg mixture, then drege in pecan crumbs. 3) Add oil to pan; swirl to coat. Cook fish 2-3 minutes on each side until golden.
