These soft lemon cookies are perfect for summer or anytime!

Steps:
- 1. Mix cake mix, oil, lemon zest, and eggs in a large bowl until dough forms. Roll into 1" balls and place 2" apart on an ungreased cookie sheet.
- 2. Dip the bottom of a glass in the granulated sugar and flatten balls to 1/4".
- 3. Bake at 375 for 5-7 minutes until edges are golden brown. Remove to cooling rack. (bottoms may be moist)
- 4. After cookies are cooled, mix powdered sugar and lemon juice in a small bowl until smooth. Drizzle over the cookies and refrigerate.
