So much flavor from fresh tomato and basil ~ light meal for a summer night !

Steps:
- 1. In 10-inch skillet, heat 2 tablespoons of the oil over medium heat. Add onion and red pepper flakes , cook 5 minutes, stirring frequently until onion is tender. Add tomatoes, garlic and salt. Heat to boiling. Reduce heat, simmer uncovered 3 minutes, stirring occasionally.
- 2. Meanwhile, cook pasta as directed on package. Drain, place in serving bowl. Pour tomato mixture over pasta, toss gently to coat. Add basil, cheese and remaining 1 tablespoon oil, toss. Makes 6 ~ 1 cup servings.
- 3. Could add grilled or sauteed shrimp or chicken.
