I'm not a huge fan of beets, but I really enjoyed this salad. The sweetness of the apples and the tanginess of the red cabbage balanced out the earthiness of the beets perfectly.

This salad is a great make-ahead dish. It's even better the next day, when the flavors have had a chance to meld.
