Applesauce Snack Cakes image

I made these sweet treats to put in the kids' lunch boxes. I think they are healthier than store bought- no preservatives. This is a make-ahead recipe: Make the batter and then keep in the fridge until ready to bake!

1 c butter, softened
2 c sugar
2 eggs
2 tsp baking soda
1 tsp vanilla extract
2 c applesauce
4 c all purpose flour
1 1/2 tsp ground cinnamon
1 tsp ground allspice
1/2 Tbsp ground cloves

Steps:

  • 1. Cream butter; gradually add sugar, beating well at medium speed. Add eggs, one at a time, beating well after each addition.
  • 2. Stir soda and vanilla into applesauce. Combine flour and spices. Add to creamed mixture alternately with applesauce mixture, mixing after each addition. Cover batter and store in the refrigerator for up two weeks.
  • 3. When ready to bake, spoon batter into paper-lined muffin pans (filling two-thirds full). Bake at 400 degrees for 15-18 minutes or until toothpick inserted in the center comes out clean. Remove from pans and cool on a wire rack.
