APPLESAUCE-WHEAT GERM MUFFINS Recipe image

Number Of Ingredients 14

1 ½ cups unbleached flour
1 cup wheat germ
2 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 egg
½ cup brown sugar
1/3 cup vegetable oil
1 cup applesauce 4/5
½ cup soymilk or ⁄ cup rice milk
2 teaspoons sugar
¼ teaspoon cinnamon

Steps:

  • Preheat oven to 425 degrees F. In large bowl, combine flour, wheat germ, baking powder, baking soda, salt, cinnamon and nutmeg. In medium bowl, beat egg with brown sugar, oil, applesauce and soy milk. Mix with dry ingredients just until evenly moistened. Spoon into muffin tins. Mix 2 teaspoons of sugar and 1/4 teaspoon cinnamon and sprinkle on top of muffins. Bake for 15-17 minutes.

I wasn't sure what to expect with these muffins, but I was pleasantly surprised. They were light and fluffy, with a subtle sweetness from the applesauce. I also liked the crunch from the wheat germ. I'll definitely make these again.

These muffins were absolutely delicious! I made them for my family for breakfast and they were a huge hit. The applesauce made them moist and flavorful, and the wheat germ added a nice nutty flavor. I will definitely be making these again soon.
