Atkins recipe - Muffin in a Minute image

I make this with Milled flax seed, I am not sure if this is the same as flaxseed meal. I think it is because mine looks nothing like this! mine is dark brown and kind of grainy BUT I love it. I tried with cinnamon butter, and cream cheese, and low carb cottage cheese mixed with 1/4 teaspoon of low carb blackberry jam! super good,...

Number Of Ingredients 6

1/4 c flaxseed meal
1/2 tsp baking powder
1 tsp splenda (1/2 packet)
1 tsp cinnamon
1 large egg, slightly beaten
1 tsp butter, melted

Steps:

  • 1. Mix flaxseed meal, (I use milled flaxseed) baking powder, splenda, and cinnamon in a coffee mug or a single serving soufflĂ© dish.
  • 2. add egg and melted butter
  • 3. microwave 1 minute or more until firm. (1 minute worked perfect for my microwave!)
  • 4. turn out and serve with butter, cream cheese or any other topping you like!! enjoy!
