Steps:
- 1. Soak the beans in water overnight. Drain and rinse. Put beans in large pot and cover with salted water.
- 2. Bring to a boil and cover venting and reduce to a simmer and simmer 2 hours until beans are soft. Rinse beans reserving the liquid.
- 3. Place lard in same pan. Add onions and garlic and cook until softened. Add the beans and with an immersion blender blend until smooth add reserved water to achieve desired consistency. You can also use a food processor. Top with cheese and melt if desired.
