Bahamian Johnny Cake image

We first had Johnny Cake on our honeymoon in The Bahamas. We loved it so much I just had to learn how to make it at home!

Number Of Ingredients 8

1 c all purpose flour
3/4 c white corn meal
3/4 tsp salt
5 tsp baking powder
2/3 c sugar
1 large egg, beaten
2 Tbsp vegetable oil
1 c milk

Steps:

  • 1. Preheat oven to 350F. Mix all dry ingredients together. Add egg, milk and oil to dry mixture and blend well.
  • 2. Pour into greased (8 inch) square pan or 2 (8 inch) loaf pans. Bake 30-35 minutes until slightly brown on top. Serve hot or cold with butter, honey or preserves.
