Baked Garlic Fries image

I love these "fries". They are easy and very delicious. I also like them because they are baked and not fried.

3 clove garlic, chopped
2 Tbsp canola oil
3 large baking potatoes, scrubbed but not peeled
1/2 tsp salt, for seasoning
1/2 tsp black pepper, for seasoning
1 Tbsp parsley flakes

Steps:

  • 1. Preheat oven to 450 F.
  • 2. In a small saucepan, heat the garlic in the oil over medium heat for 2 minutes. Strain the garlic from the oil with a small, mesh strainer. Set both the garlic and the oil aside.
  • 3. Scrub the potatoes and cut into 1/2-inch sticks. In a large bowl, toss the oil, potatoes and 1/2 teaspoon of salt.
  • 4. Spray a foil-lined baking sheet with non-stick cooking spray and spread the potatoes onto it in a single layer. Bake until golden brown, about 35 minutes.
  • 5. Remove the potatoes from the tray. Toss with parsley flakes, reserved garlic and additional salt, to taste. Serve immediately.
