Yield 1 6-8 people

Number Of Ingredients 8

4 tbsp unsalted butter
2 c heavy cream
1/2 c tomato puree
1/2 c freshly grated Parmesan cheese ( 2 oz)
salt and pepper
1/3 lb finely diced pancetta and prosciutto
1 lb fresh spinach
1 lb medium pasta shells

Steps:

  • 1. In a large medium saucepan, melt 2 tbsp butter. Add the heavy cream and tomato puree and bring to a boil over high heat. Reduce the heat to moderately low and simmer until reduced to 2 1/4 cups, about 15 minutes. Remove from the hear and stir in 1/4 cup Parmesan cheese. 2. In a large skillet, cook the pancetta in the remaining 2 tbsp butter over moderately high heat until slightly crisp. Add the spinach in batches and cook, tossing, until wilted. Season with salt and pepper. 3. Preheat the oven to 350F. Cook the pasta shells in a large pot of boiling water until barely al dente, about 7 minutes. Drain. 4. Toss the pasta with the creamy tomato sauce and spinach. Spoon it into a 3 qt shallow baking dish. Sprinkle remaining cheese on top and bake for 15 to 20 minutes.

I love this recipe! The shells are always perfectly cooked and the filling is so flavorful. I've made it several times and it's always a hit with my family and friends.

Overall, I thought these shells were a good recipe. They were easy to make and they tasted pretty good. I would definitely make them again.

These shells were pretty good, but I think I would have liked them better if I had used a different type of pasta. I think penne or rigatoni would have been a better choice.

I'm not sure what I did wrong, but my shells didn't turn out very well. The spinach was too watery and the pancetta was too salty.

I thought these shells were just okay. The flavor was good, but the shells were a little too soft for my liking.

These shells were a lot of work to make, and I wasn't really impressed with the results. I think I'll stick to my old baked ziti recipe.

I followed the recipe exactly, but my shells turned out dry and overcooked. I think I would have been better off cooking them for a shorter amount of time.

These shells were a little bland for my taste. I think I would have liked them better if I had used a more flavorful cheese, like Parmesan or Asiago.

I was a little skeptical about this recipe, but I'm so glad I tried it. The shells were so flavorful and the spinach and pancetta filling was perfect.

These shells were easy to make and turned out great. I used a jarred marinara sauce instead of making my own, and it still tasted amazing.

I'm not a huge fan of spinach, but I loved these shells. The pancetta and cheese really helped to balance out the flavor.

This dish was a hit with my family! The combination of spinach, pancetta, and cheese was perfect, and the shells were cooked to perfection. I will definitely be making this again.
