Time 1h25m

Yield 1-2 one large or two small loaves, 6-8 serving(s)

Number Of Ingredients 10

4 ounces butter, softened
1 1/4 cups flour
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 cup sugar
2 large ripe bananas, mashed
2 eggs, beaten
5 tablespoons boiling water
1 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 325°F Sift dry ingredients (not sugar) in medium bowl and set aside. Beat butter and sugar in separate larger bowl until they are light and fluffy. Beat in bananas then eggs. *I usually beat the bananas in a bowl until I need them, rinse it out, then beat the eggs in the same bowl so I have less dishes to wash.* Stir in flour mixture alternately with boiling water until just combined. Stir in chocolate chips. Bake for 1 hr 10 min or until risen and firm to touch. *Most of the times I've made it, it doesn't take the full hour to cook.* Let cool and turn out.

I'm not a huge fan of banana bread, but this recipe was really good! The loaf was moist and flavorful, and the chocolate chips added a nice touch of sweetness. I'll definitely be making this again.

I was really excited to try this recipe, but I was disappointed with the results. The loaf was dry and crumbly, and the chocolate chips were barely noticeable.
