Banana Spice Snack Cake image

This is a small snack cake. Good eaten as is, without frosting, but a cream cheese frosting or powdered sugar also good. Also, some chopped pecans or walnuts can be added.

1/2 c unsalted butter, softened
3/4 c light brown sugar, packed
1 large egg
1/4 c buttermilk
1 tsp vanilla extract
2 ripe bananas, mashed
1 1/2 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg

Steps:

  • 1. Preheat oven to 350℉ (180℃). Coat a 8-inch round or square baking pan with nonstick cooking spray.
  • 2. In a large mixing bowl, with electric mixer, cream butter and brown sugar. Beat in egg, buttermilk, vanilla, and mashed banana until blended.
  • 3. In a bowl, combine dry ingredients and spices.
  • 4. Mix the dry ingredients into the butter mixture until moistened. Do not overbeat.
  • 5. Pour batter into prepared pan and spread evenly. Bake 25 to 30 minutes, or until a wooden skewer poked into middle of cake comes out clean.
  • 6. Cool in pan on wire rack for about 20 minutes. Can be left in pan or inverted onto cake plate. Can be frosted, but I serve it plain, with a scoop of vanilla ice cream, or a dollop of vanilla yogurt or drizzle of caramel ice cream topping.
