BLACK BEAN, APPLE, MANGO, SALSA image

1 mango
2 medium crisp peeled apples (I like granny smith)
1 pint grape yellow tomatoes
1 1/2 cups chopped baby roma tomatoes
1/2 cup chopped sweet onions
2 ears of fresh corn (kernels removed)
1/2 medium orange bell pepper chopped
1/3 medium red bell pepper chopped
1 pablano pepper minced
3 jalapeno peppers minced
2 red chili peppers minced
1/3 habanero pepper finely minced
2/3 cup chopped cilantro
1/4 cup chopped oregano
5 cloves garlic finely minced
1/2 orange juiced (I prefer blood oranges)
1 tsp orange zest
1/2 lemon juiced
1 tsp lemon zest
1 lime juiced
1/2 tsp lime zest
2 tsp balsamic vinegar
1 tsp sea salt (I prefer Hawaiian red )
1 15 oz. can tomato puree
1 15 oz. can black beans rinsed

Steps:

  • To speed up the chopping process I put the vegetables in my large KitchenAid food processor one at at time (a couple of pulses and their done). I put my herbs in my small KitchenAid food processor and do the same.
