BLACK WALNUT LAYER CAKE image

Some of you wanted my Black Walnut Layer Cake Recipe so...Here you are. Actually my mother always made the Black Walnut Layer Cake. I will warn you it takes 2 cups of Black Walnuts instead of one. However, you get twice the aroma and it is VERY PRETTY !!!

CAKE:
1 c butter, softened
2 c sugar
4 eggs
3 c all purpose flour
2 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla extract
1 c whole milk
1 c chopped black walnuts
WHITE FUDGE FROSTING
3 c sugar
1 c whole milk
1 stick butter, softened
1 tsp vanilla extract
1 c chopped black walnuts

Steps:

  • 1. CAKE: Pre heat oven to 375 degree F. Cream butter and sugar in a large mixing bowl. Add eggs one at a time beating after each addition. Sift flour, baking powder and salt together and stir into creamed mixture,alternating with milk. Add vanilla and beat to combine. Fold in Walnuts just to incorporate.
  • 2. Pour mixture into 3 greased and floured 9 inch round cake pans. Bake until done, about 25 minutes. Test with tooth pick to be sure.
  • 3. FROSTING: Combine sugar and milk in a medium sauce pan and bring to a boil. Turn down to low boil for 5 minutes, stirring constantly. Remove from heat and add butter and vanilla. Cool. After cooled, beat until thickened. Follow instructions below on how to apply frosting.
  • 4. TIP: Turn 1 st layer of cake on to cake plate top side down, sprinkle with walnuts and thickly drizzle with frosting. Place second layer on top of first layer top side down. Sprinkle with walnuts and drizzle with frosting. Place third layer on top of second layer top side up. Frost top and sides of cake, covering top first and drizzle as heavily as possible down sides. Sprinkle remaining walnuts on top.
