10-MINUTE LIME CRACKER PIE

10-Minute Lime Cracker Pie image

This recipe is from Serious Eats and it is mandatory that you let the pie sit overnight loosely wrapped in plastic. This is how the crackers fully absorb the custard. I used a deep dish pie plate. Cook time is refrigeration time.

10-MINUTE LIME PIE

10-Minute Lime Pie image

A super easy stand-in for traditional key lime pie. Slightly altered from the version posted on Serious Eats (http://www.seriouseats.com/recipes/2011/07/10-minute-lime-cracker-pie-recipe.html). Squeezing the limes can be a chore, but you can always skip it by buying fresh lime juice.

Time 10m

Yield 1 pie, 10 serving(s)

Number Of Ingredients 5

2 (14 ounce) cans sweetened condensed milk
1 pint heavy cream
3/4 cup lime juice, plus
1 tablespoon lime zest, from 8 limes
70 Ritz crackers (about 35 crackers per sleeve)

Steps:

  • Combine condensed milk and heavy cream in a large bowl.
  • Add lime juice and whisk until thickened, about 1 minute.
  • Spread 1 cup filling on bottom of deep-dish pie plate.
  • Top with single layer of Ritz crackers.
  • Repeat, alternating layers of filling and crackers until pie plate is full. Finish with a layer of filling. For that layer, mix half of the lime zest into the "batter".
  • Sprinkle with the remaining grated lime zest.
  • Refrigerate overnight. Keep refrigerated until serving.
  • Note: Original recipe called for 1/2 cup juice but I found it better with more. I also only needed 6 limes to provide the juice I needed. Club crackers can stand-in for Ritz.

5-INGREDIENT KEY LIME PIE

5-Ingredient Key Lime Pie image

A simple 5-ingredient Key lime pie I've been eating my whole life in south Florida.

Provided by Logan Fleming

Time 50m

Yield 8

Number Of Ingredients 5

⅓ (14.4 ounce) package graham crackers, broken into quarters
½ cup unsalted butter, melted
1 (14 ounce) can sweetened condensed milk
3 large egg yolks
½ cup Key lime juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Process graham crackers in a food processor; the finer the crumbs, the more the crust will stick together. Transfer to a bowl and mix with melted butter. Press and mold mixture into a 9-inch pie pan.
  • Bake in the preheated oven for 10 to 12 minutes. Remove from the oven and let cool for 15 minutes. Leave the oven on.
  • While the crust is cooling, combine condensed milk and egg yolks in a bowl; whisk until fully blended and no yolks are visible in the mixture. Slowly pour in Key lime juice while stirring until combined. Pour into the cooled crust.
  • Return to the oven and bake until filling is firm to the touch and only slightly jiggly in the center, 10 to 15 minutes. Cool to room temperature before serving.

FROSTY LIME PIE

Frosty Lime Pie image

This frozen dessert delivers cold, tart relief on a hot summer day. Pearl Byrd Foster served this pie on her menu at Mr. and Mrs. Foster's Place, her 15-table restaurant on the Upper East Side. Ms. Foster opened the restaurant after a 30-year career in hotel, department store and food magazine kitchens. Raymond Sokolov, a former food editor of The New York Times, wrote about this recipe in 1971. The real secret to making this pie, he said, is in how you handle the egg yolks. Heat them too much and they scramble, or too little and they won't thicken. When the yolks get too hot for your finger, around 165 degrees, they're hot enough.

Time 1h

Yield 8 servings

Number Of Ingredients 12

1 1/4 cups graham cracker crumbs
1/4 cup superfine sugar
Pinch of salt
1/4 cup unsalted butter, at room temperature
5 eggs, separated
3/4 cup superfine sugar, divided
2/3 cup fresh squeezed, strained lime juice
2 teaspoons grated lime zest
1/8 teaspoon salt
1 1/2 cups heavy cream, whipped
Thin slices of lime or fresh strawberries
Sugar

Steps:

  • Heat oven to 350 degrees.
  • Make the crust: Place the graham cracker crumbs, sugar and salt in a bowl. Add the butter and work with a wooden spoon (or your fingers) to blend well. Press the mixture evenly into a 9-inch pie plate with your fingertips, or use an 8-inch pie plate to press down the mixture. Transfer to oven and bake 10 minutes. Cool to room temperature.
  • Make the filling: Beat the yolks in the bowl of a stand mixer until very thick. Gradually beat in half the sugar until mixture is very pale and thick and forms a rope when dropped from the beater.
  • Stir in the lime juice and zest and transfer to a double boiler. Heat over over simmering water, stirring until mixture coats the back of a spoon. Do not allow to boil. Transfer to a large bowl and let cool to room temperature.
  • Once the yolk mixture reaches room temperature, beat the egg whites with the salt in a separate bowl until soft peaks form. Gradually beat in the remaining sugar until mixture is stiff and shiny. Stir a third of this meringue mixture into the cooled yolk mixture. Fold in remaining meringue mixture until evenly distributed.
  • Turn the mixture out into the cooled graham cracker pie shell and bake 15 minutes, or until lightly tinged with brown. Let cool.
  • Transfer the pie to the refrigerator and let chill thoroughly, uncovered, then transfer to the freezer. Freeze at least 8 hours or overnight. Once it is frozen, cover with plastic wrap and keep frozen until just before serving.
  • Remove from the freezer 10 minutes before serving. Cover with the whipped cream and garnish with lime slices dipped in sugar or fresh strawberries.

Tips:

  • For a graham cracker crust that is extra crispy, pre-bake it before filling.
  • For a smoother filling, use a blender or food processor to mix the ingredients.
  • For a more intense lime flavor, use freshly squeezed lime juice.
  • To make the pie ahead of time, bake it and then let it cool completely. Cover it with plastic wrap and store it in the refrigerator for up to three days.
  • For a more elegant presentation, pipe the whipped cream onto the pie using a pastry bag fitted with a star tip.

Conclusion:

Lime cracker pie is a classic Southern dessert that is easy to make and always a crowd-pleaser. With its creamy, tangy filling and buttery graham cracker crust, it's the perfect pie for any occasion. Whether you're serving it at a potluck, a picnic, or just for dessert after dinner, this pie is sure to be a hit.
