This wonderful dish is great for a cookout. I've even made it while camping, cooked over a charcoal grill. Squeeze the roasted cloves of garlic over your potatoes or on crusty buttered chunks of French bread. A taste sensation!

Categories     Garlic     Potato     Side     Quick & Easy     Rosemary     Fall     Gourmet

Yield Serves 2

Number Of Ingredients 4

1 pound small red potatoes, quartered
3 large garlic cloves, sliced thin lengthwise
1 tablespoon olive oil
1/2 teaspoon dried rosemary, crumbled

Steps:

  • In a steamer set over boiling water steam the potatoes, covered, for 8 to 10 minutes, or until they are just tender. In a non-stick skillet cook the garlic in the oil over moderate heat, stirrng, until it is pale golden, add the potatoes, the rosemary, and salt and pepper to taste, and sauté the mixture over moderately high heat, stirring, for 5 minutes, or until the potatoes are golden.

Tips:

  • Choose the right potatoes. Waxy potatoes, such as Yukon Gold or red potatoes, hold their shape better than starchy potatoes, such as Russet potatoes, making them ideal for roasting.
  • Cut the potatoes evenly. This will ensure that they cook evenly.
  • Toss the potatoes with oil and seasonings before roasting. This will help them to brown and crisp.
  • Roast the potatoes at a high temperature. This will help them to get crispy on the outside and tender on the inside.
  • Shake the potatoes halfway through roasting. This will help them to cook evenly.
  • Add fresh herbs or other toppings after roasting. This will add extra flavor and color to the potatoes.

Conclusion:

Rosemary Garlic Potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are perfect for weeknight dinners, potlucks, and holiday gatherings. With just a few simple ingredients and a little bit of time, you can create a dish that everyone will love. So next time you are looking for a tasty and hassle-free side dish, give Rosemary Garlic Potatoes a try.
