1 -1 1/2 -pound lobster
3 1/2 ounces buffalo mozzarella
bocconcini, cut into 1/2 -inch wedges
1 1/2 cups assorted cherry tomatoes, halved (or, if in season, small heirloom tomatoes, cut into wedges)
8 large basil leaves, torn
2 tablespoons extra-virgin olive oil
3/4 pound paccheri
1/2 cup extra-virgin olive oil
2 cloves garlic, thinly sliced
1 tablespoon chopped parsley

Steps:

  • Prepare the salad: bring a large pot of generously salted water to a boil. Add the lobster and cook for 11 minutes. Remove the lobster and reserve the cooking water. When the lobster is cool enough to handle, remove the meat from the shell and cut it into 1/2 -inch pieces.

12 plum tomatoes, cut lengthwise in half
1 1/2 cups extra-virgin olive oil
salt and freshly ground black pepper
2 cloves garlic
6 tablespoons freshly grated Parmigiano-Reggiano
6 cups fresh basil leaves, plus a few leaves for garnish
4 tablespoons pine nuts
8 large bocconcini (from buffalo mozzarella) or 2 pounds buffalo mozzarella, cut into quarters

Steps:

  • 1. Preheat the oven to 200°F.
  • 2. In a large bowl, toss the tomatoes with 1/2 cup of the olive oil and salt and pepper to taste. Place cut side down on a small baking sheet and bake for about 2 hours, or until the tomatoes are softened.
  • 3. Remove the tomatoes from the oven and let cool.

Two 4-ounce balls burrata
2 cups fresh basil leaves

1 clove garlic, smashed and peeled
