THE BEST VINEGAR COLESLAW

The Best Vinegar Coleslaw image

We love the zippiness that a vinegar-based dressing brings to this coleslaw, making it the perfect partner for rich, meaty dishes like pulled pork or ribs. Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. But the real secret to this colorful coleslaw is the marinating time - a long trip to the fridge softens up the veggies and gives them time to absorb the flavors of the vinaigrette. A drizzle of olive oil at the end balances the acidity.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage. This will help the slaw absorb the dressing more easily and result in a more flavorful dish.
  • Don't be afraid to experiment with different vegetables. In addition to cabbage, you could also use broccoli, cauliflower, or carrots. You could also add some chopped nuts or seeds for a crunchy texture.
  • Make the dressing ahead of time. This will allow the flavors to meld together and develop. You can store the dressing in the refrigerator for up to 2 weeks.
  • Let the slaw rest for at least 30 minutes before serving. This will give the flavors time to meld together and the slaw time to soften. You can also refrigerate the slaw for up to 2 days before serving.
